My Personal Life:
Hi, I’m Healthy Emmie! I'm a Nutritionist, Weight Loss Specialist, and Holistic Health Coach. I’ve been living a plant-based lifestyle for over ten years.
I grew up in the suburbs of Boston, went to college in North Carolina, studied abroad in London, graduated, and worked as a schoolteacher in Australia. Then I moved back to Boston and met my husband-to-be almost immediately after I returned home! Fast forward six years later, and I now live in Boston with my fiancé and our two playful cats, Bear and Versace. (Disclaimer: Versace was his foster-name when we adopted him, and we just kept it because it matched his over-the-top personality. We tried to give him another name but it just didn't stick.)
When I’m not working, you’ll find me... working. LOL, workaholic. 🙋♀️ (I love what I do, so is it really work...?) But in all seriousness, I think the best way to answer “Tell me about who you are outside of your job” is to answer the better question: “Walk me through your ideal day off…”
So here's my ideal day off:
It’s a September Sunday morning in Boston. (September is the best month of the year, and Sunday is the best day of the week. If you disagree with me, I’ll see you in court.) After an early morning run, I head to the farmers market to get ingredients for soup and pick up some freshly baked bread. After showering and making tea, I do my “Sunday Reset Routine,” which involves cleaning my space and setting up for the week ahead. Then I head to my parents’ house for lunch, and my friends join. We eat sandwiches outside. After lunch, I head back into the city, do some window shopping, and visit the bookstore. Then I come home, make veggie soup, watch football with my fiancé, and I’m in bed by 8 o’clock.
Speaking of my parents… About ten years ago, I convinced them to switch to a whole-food, plant-based lifestyle, and the transformation in their health has been incredible. My mum’s menopause weight gain and high cholesterol disappeared, and my dad lost 60 lbs—he’s now super fit and trim! You can even find them featured on my YouTube channel under the Healthy Mummy series.
My Professional Life:
I started posting on YouTube quite literally when YouTube was invented. My first-ever video was called “Staring Contest with a Cat”—a one-minute video of our childhood cat, Sammy, who stared at the camera for a full minute without blinking. The video was featured on YouTube’s homepage and went viral. Yes, that’s how early I got into the game… a video of a cat doing nothing was enough to go viral.
I always had a knack for and a passion for video creation. Throughout middle school, high school, and college, I posted regularly on YouTube. I dreamt of turning that passion into a career, but the practical, play-it-safe side of me had other plans. I was on track to become a math teacher, so a math teacher I would be. YouTube could just stay a side gig.
In college, I transitioned to a plant-based diet and began sharing videos about it. Up until that point, my content had been mostly fashion, beauty, lifestyle, and travel—so this was a totally new angle. But not many people were posting about plant-based eating at the time, so I became known as one of the early voices in the community. Eventually, I rebranded my channel to “Healthy Emmie” and officially became a health and wellness content creator.
What made me stand out was the fact that I was a natural-born teacher who also loved creating videos. I taught like a teacher in my nutrition content—and not just any teacher, a math teacher. That meant my teaching style was formulaic, clear, and step-by-step. I’ve always had a simplicity-first mindset. I live by the saying “Simplicity is the ultimate form of sophistication.” And in a world as overwhelming as health and wellness, people appreciated how I made complex topics feel simple and doable.
Later on, I started sharing videos of my parents, who had followed my nutrition advice and undergone major transformations. Once people saw their results, they started asking me for coaching. I didn’t have any certifications at the time, so I decided to pursue them. I received my certificates as a Weight Loss Specialist and Holistic Health Coach, and began working with online clients.
After graduating college at the top of my class, I had a job lined up as a math teacher in Boston. I taught for a year before moving to Australia to teach there. I told everyone I was going just because “I’m 23 and single, and now’s the time to do it!” But really, I wanted to pursue my dream—turn my passion for content into a career and build a business. For some reason, it felt easier to go to the other side of the world and give myself full permission to chase it.
And so I did.
In 2018, I moved to Australia alone and began working as a schoolteacher. At the same time, I was determined to build my health coaching business. Within three months, I left teaching to go all-in on Healthy Emmie.
A year later, my 1:1 coaching had grown into the Slim on Starch Program, and I’d hired over 30 coaches to help support our clients.
Over the next six years, I would go on to work with over 4,000 clients in the Slim on Starch Program. I’d also launch 12 recipe books, a clean Vitamin B12 supplement, and a clean Vitamin D3 supplement. My YouTube community grew to over 700,000 subscribers, my Instagram to over 770,000 followers, and my TikTok to over 650,000 followers.
In spring of 2024, after six years of refining Slim on Starch, I decided to rebrand it to simply “Slim.” I wanted it to be truly holistic — so everyone who joined would get a custom meal plan, custom workout plan, daily meditations with me, journaling prompts, access to the full Slim course, weekly Q&As, and more. I spent months building out a new platform and app. In September 2024, I officially launched Slim, which anyone can now join.
In 2025, I also began expanding my business model to include brand partnerships. I’ve had the privilege of working with incredible wellness companies whose products I truly believe in—helping them create content and share their message with my community.
Along the way, I’ve been featured in Forbes, Apple News, HuffPost, Business Insider, and more. I wake up every morning in disbelief that this is my life. I am the luckiest girl in the world, and I can't wait to have you be a part of it. Welcome. 🤍
